Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add mixed vegetables and sauté for 5 minutes.
- In a pot, combine quinoa, vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in sautéed vegetables and garlic powder into quinoa.
- Transfer to a baking dish and bake for 20 minutes.
- Garnish with chopped parsley before serving.
