Ingredients

  • 2 cups of quinoa
  • 1 cup of vegetable broth
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 bell pepper, diced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt to taste
  • Pepper to taste
  • 1 avocado, sliced

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and cover. Simmer for 15 minutes or until liquid is absorbed.
  4. In a large bowl, mix cooked quinoa, black beans, corn, and bell pepper.
  5. Add cumin, chili powder, salt, and pepper. Mix well.
  6. Serve with avocado slices on top.

Notes

  • This dish can be served warm or cold.
