Ingredients

- 2 cups of quinoa
- 1 cup of vegetable broth
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 bell pepper, diced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt to taste
- Pepper to taste
- 1 avocado, sliced
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and cover. Simmer for 15 minutes or until liquid is absorbed.
- In a large bowl, mix cooked quinoa, black beans, corn, and bell pepper.
- Add cumin, chili powder, salt, and pepper. Mix well.
- Serve with avocado slices on top.
Notes
- This dish can be served warm or cold.
- Customize with your favorite vegetables.
- Can be made a day ahead and stored in the fridge.
