Ingredients

  • 4 cups vegetable broth
  • 1 large butternut squash, diced
  • 2 cups Brussels sprouts, halved
  • 1 red onion, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash, Brussels sprouts, and red onion with olive oil, salt, pepper, and thyme.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes until tender.
  4. Meanwhile, rinse the quinoa under cold water. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Once cooked, fluff the quinoa with a fork and mix in the roasted vegetables, cranberries, and pecans.
  6. Serve warm as a main dish for Thanksgiving.
