Ingredients

  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion, celery, carrots, and sauté until soft.
  4. In a large bowl, combine bread cubes, sautéed vegetables, walnuts, and cranberries.
  5. Pour vegetable broth over the mixture and stir until well combined.
  6. Add sage, thyme, salt, and pepper. Mix thoroughly.
  7. Transfer to a greased baking dish.
  8. Bake for 25-30 minutes until golden brown.
