A delicious vegan turkey alternative for Thanksgiving.
Ingredients
Scale
- 1 large cauliflower
- 1 cup cooked quinoa
- 1/2 cup walnuts, chopped
- 1/4 cup nutritional yeast
- 1 tablespoon olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Remove the leaves from the cauliflower and trim the stem.
- In a bowl, mix quinoa, walnuts, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Stuff the mixture into the cauliflower.
- Drizzle olive oil over the cauliflower.
- Place the cauliflower on a baking sheet.
- Bake for 45 minutes or until tender.
- Let it cool for 10 minutes before slicing.
Notes
- Serve with vegan gravy.
- Pair with roasted vegetables.
- Can prepare stuffing a day in advance.
