Ingredients

  • 1 large cauliflower
  • 1 cup cooked quinoa
  • 1/2 cup walnuts, chopped
  • 1/4 cup nutritional yeast
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove the leaves from the cauliflower and trim the stem.
  3. In a bowl, mix quinoa, walnuts, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Stuff the mixture into the cauliflower.
  5. Drizzle olive oil over the cauliflower.
  6. Place the cauliflower on a baking sheet.
  7. Bake for 45 minutes or until tender.
  8. Let it cool for 10 minutes before slicing.
