Description
A delicious vegan feast for Thanksgiving.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup corn kernels
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine quinoa, black beans, bell pepper, corn, avocado, and cilantro.
- Drizzle with lime juice and season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
- This dish is great served warm or cold.
- Feel free to add other vegetables of your choice.
- Can be made a day in advance.
