Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onions, carrots, celery, and mushrooms. Sauté until tender.
  6. Add garlic, thyme, and rosemary. Cook for 1 more minute.
  7. Fluff the cooked quinoa and mix with sautéed vegetables.
  8. Season with salt and pepper.
  9. Serve warm.
