Ingredients

- 2 cups quinoa
- 1 cup vegetable broth
- 1 cup chopped mushrooms
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onions, carrots, celery, and mushrooms. Sauté until tender.
- Add garlic, thyme, and rosemary. Cook for 1 more minute.
- Fluff the cooked quinoa and mix with sautéed vegetables.
- Season with salt and pepper.
- Serve warm.
Notes
- This dish can be made ahead of time.
- Store leftovers in an airtight container.
- Add nuts for extra crunch if desired.
