A creamy and rich vegan version of lobster mac and cheese.
Ingredients

- 8 oz macaroni
- 1 cup cashews, soaked
- 1 cup almond milk
- 1/4 cup nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1 tbsp lemon juice
- 1 cup vegan lobster alternative, chopped
- Salt to taste
- Pepper to taste
Instructions
- Cook macaroni according to package instructions.
- Blend soaked cashews, almond milk, nutritional yeast, garlic powder, onion powder, smoked paprika, lemon juice, salt, and pepper until smooth.
- In a large pot, combine cooked macaroni and cashew sauce.
- Add vegan lobster alternative and mix well.
- Heat over low heat until warmed through.
- Serve hot and enjoy.
Notes
- Ensure cashews are soaked for at least 2 hours.
- Adjust seasoning to your preference.
- Can add breadcrumbs on top for a crunchy texture.
