Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup mushrooms, chopped
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Drain and rinse the soaked cashews.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until fragrant.
  4. Add carrots, celery, and mushrooms, cook until soft.
  5. Add vegetable broth, tomato paste, and Old Bay seasoning.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Blend the mixture until smooth, then return to pot.
  8. Stir in lemon juice, salt, and pepper.
  9. Serve hot, garnished with fresh parsley.

Notes

  • Soak cashews for at least 4 hours for a creamy texture.
  • Adjust seasoning to your preference.
  • For a spicier kick, add a pinch of cayenne pepper.
