Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  4. In a skillet, heat olive oil over medium heat.
  5. Add bell pepper and zucchini. Sauté for 5-7 minutes.
  6. Add cherry tomatoes and chickpeas. Cook for another 5 minutes.
  7. Stir in cooked quinoa, garlic powder, onion powder, salt, and pepper.
  8. Cook for 2 more minutes, stirring occasionally.
  9. Serve warm, garnished with fresh basil.
