Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
- In a skillet, heat olive oil over medium heat.
- Add bell pepper and zucchini. Sauté for 5-7 minutes.
- Add cherry tomatoes and chickpeas. Cook for another 5 minutes.
- Stir in cooked quinoa, garlic powder, onion powder, salt, and pepper.
- Cook for 2 more minutes, stirring occasionally.
- Serve warm, garnished with fresh basil.
Notes
- Adjust spices according to your taste.
- Feel free to add other vegetables.
- This dish can be served cold as a salad.
