Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and cover.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. Remove from heat and let sit for 5 minutes.
  6. Fluff quinoa with a fork.
  7. In a large bowl, combine quinoa, tomatoes, cucumber, and onion.
  8. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  9. Pour dressing over salad and mix well.
  10. Garnish with fresh parsley before serving.
