Ingredients

- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, beans)
- 1 cup paneer, cubed
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander for garnish
Instructions
- Rinse the basmati rice in water until the water runs clear.
- Soak the rice in water for 30 minutes.
- Heat oil in a pan and add cumin seeds.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook for a minute.
- Add chopped tomatoes and cook until soft.
- Add mixed vegetables and paneer, cooking for 5 minutes.
- Add soaked rice, salt, and garam masala.
- Add 4 cups of water and bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes.
- Remove from heat and let it sit for 5 minutes before serving.
Notes
- Adjust spice levels to your preference.
- Serve with raita or salad.
- You can use chicken or tofu as alternative protein sources.
