Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until liquid is absorbed.
  4. In a pan, heat olive oil and add cherry tomatoes. Sauté for 3-4 minutes.
  5. Add spinach and cook until wilted.
  6. Mix cooked quinoa with sautéed vegetables, feta cheese, lemon juice, salt, and pepper.
  7. Serve warm or chilled.
