Ingredients

  • 1 cup of spinach
  • 1/2 cup of sun-dried tomatoes
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season chicken breasts with salt and pepper.
  3. Cook chicken in the pan for 6-7 minutes per side until golden brown.
  4. Remove chicken from pan and set aside.
  5. In the same pan, add heavy cream, spinach, and sun-dried tomatoes.
  6. Stir in Parmesan cheese and cook until sauce thickens.
  7. Return chicken to the pan and coat with sauce.
  8. Simmer for 5 minutes before serving.
