Ingredients

- 2 cups of cooked quinoa
- 1 cup of black beans, drained and rinsed
- 1 cup of corn
- 1 red bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pan, heat some oil over medium heat.
- Add the onion and garlic. Sauté until translucent.
- Stir in the red bell pepper, corn, black beans, cumin, and chili powder.
- Cook for 5 minutes, stirring occasionally.
- Add the cooked quinoa and mix well.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.

- Feel free to add other vegetables.
