Ingredients

  • 1 cup of black beans, drained and rinsed
  • 1 cup of corn
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat some oil over medium heat.
  2. Add the onion and garlic. Sauté until translucent.
  3. Stir in the red bell pepper, corn, black beans, cumin, and chili powder.
  4. Cook for 5 minutes, stirring occasionally.
  5. Add the cooked quinoa and mix well.
  6. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.
