Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. In a skillet, sauté onions, carrots, and celery until soft.
  5. Add spinach and cook until wilted.
  6. Combine the quinoa and sautéed vegetables in a large bowl.
  7. Season with garlic powder, onion powder, salt, and pepper.
  8. Serve warm.
