Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1/2 cup diced bell peppers
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add kale and bell peppers. Sauté for 5 minutes.
- Fluff quinoa with a fork and add to the skillet.
- Stir in walnuts, lemon juice, salt, and pepper.
- Serve warm.
