- 2 cups of diced butternut squash
- 1 cup of cooked quinoa
- 1 cup of black beans, rinsed
- 1 bell pepper, chopped
- 1 teaspoon of cumin
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, cumin, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25 minutes.
- In a large bowl, combine the cooked quinoa, black beans, and chopped bell pepper.
- Add the roasted squash to the bowl and mix well.
- Garnish with fresh cilantro before serving.

- This dish can be made ahead of time and reheated.
