Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 8 ounces crab meat or tofu
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a rice cooker and cook according to instructions.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, mix vinegar mixture into rice and let cool.
  5. Lay a sheet of nori on a bamboo mat.
  6. Spread a layer of sushi rice over nori, leaving a small border at the top.
  7. Add a line of avocado, cucumber, and crab meat or tofu at the bottom.
  8. Roll the sushi tightly away from you, using the mat for support.
  9. Slice the roll into bite-sized pieces.
  10. Serve with soy sauce.
