Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 avocado, sliced
- 1 cucumber, julienned
- 8 ounces crab meat or tofu
- Soy sauce for serving
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a rice cooker and cook according to instructions.
- In a small saucepan, heat rice vinegar, sugar, and salt until dissolved.
- Once rice is cooked, mix vinegar mixture into rice and let cool.
- Lay a sheet of nori on a bamboo mat.
- Spread a layer of sushi rice over nori, leaving a small border at the top.
- Add a line of avocado, cucumber, and crab meat or tofu at the bottom.
- Roll the sushi tightly away from you, using the mat for support.
- Slice the roll into bite-sized pieces.
- Serve with soy sauce.
