- 1 (5-6 pound) prime rib roast
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt to taste

Instructions
- Preheat your oven to 450°F (232°C).
- Pat the roast dry with paper towels.
- Rub the olive oil all over the roast.
- Mix garlic, rosemary, thyme, salt, and pepper in a bowl.
- Rub the herb mixture evenly over the roast.
- Place the roast in a roasting pan bone side down.
- Roast for 20 minutes at 450°F.
- Reduce the oven temperature to 325°F (163°C) and continue roasting.
- Cook until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 20 minutes before slicing.
