- 2 pounds pork shoulder
- 1 large onion, sliced
- 3 cups sauerkraut, drained
- 1 cup chicken broth
- 1 tablespoon caraway seeds
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (165°C).
- Season the pork shoulder with salt and pepper.
- In a large oven-safe pot, heat some oil and brown the pork on all sides.
- Add the sliced onion and sauté until soft.
- Stir in the sauerkraut and chicken broth.
- Sprinkle caraway seeds over the top.
- Cover the pot and bake for 2 to 3 hours, until the pork is tender.
- Remove from oven and let it rest before slicing.
Notes
- Serve with mashed potatoes for a complete meal.
- Store leftovers in the refrigerator for up to three days.
- This dish can be made in a slow cooker as well.
