Ingredients

  • 4 cups of vegetable broth

  • Salt to taste

Instructions

  1. In a pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Add the bell pepper and cook for another 2 minutes.
  4. Stir in the rice and cumin, toast for 1 minute.
  5. Add the black beans and vegetable broth.
  6. Bring to a boil, then reduce heat and cover.
  7. Cook for 20 minutes or until rice is tender.
  8. Fluff with a fork and season with salt.
