A special dish for New Year’s Eve celebrations.
Ingredients

- 2 cups of rice
- 1 cup of black beans
- 1 red bell pepper, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 teaspoon of cumin
- Salt to taste
- 1 tablespoon of olive oil
Instructions
- In a pot, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until softened.
- Add the bell pepper and cook for another 2 minutes.
- Stir in the rice and cumin, toast for 1 minute.
- Add the black beans and vegetable broth.
- Bring to a boil, then reduce heat and cover.
- Cook for 20 minutes or until rice is tender.
- Fluff with a fork and season with salt.

- This dish can be made ahead of time and reheated.
- Pair with your favorite protein for a complete meal.
