A festive dish perfect for New Year’s Eve celebrations.
Ingredients

- 2 cups of rice
- 1 cup of black beans
- 1 cup of corn
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper, cook for another 3 minutes.
- Stir in rice, black beans, corn, cumin, paprika, salt, and pepper.
- Add 4 cups of water, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and garnish with cilantro before serving.
Notes
- Serve warm for best taste.
- Can be made a day in advance.
- Adjust spices according to preference.
