Ingredients

  • 2 lbs of beef tenderloin
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)
  • 1 loaf of French bread
  • 1 cup of dessert of your choice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the beef in a roasting pan and cook for 25-30 minutes for medium rare.
  4. In a saucepan, bring red wine to a simmer and reduce by half.
  5. Steam the mixed vegetables until tender.
  6. Serve the beef with wine sauce, vegetables, and sliced French bread.
  7. Finish with dessert.
