A festive dinner to celebrate New Year’s Eve with family and friends.
Ingredients

- 2 lbs of beef tenderloin
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 1 loaf of French bread
- 1 cup of dessert of your choice
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the beef in a roasting pan and cook for 25-30 minutes for medium rare.
- In a saucepan, bring red wine to a simmer and reduce by half.
- Steam the mixed vegetables until tender.
- Serve the beef with wine sauce, vegetables, and sliced French bread.
- Finish with dessert.

- Let the beef rest for 10 minutes before slicing.
- Adjust cooking time for desired doneness.
