Ingredients

  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear the beef on all sides.
  4. Transfer the beef to a baking dish and roast in the oven for 25-30 minutes.
  5. In the same skillet, add red wine and reduce by half.
  6. Steam mixed vegetables until tender.
  7. Remove the beef from the oven, let it rest, and slice.
  8. Serve beef with wine sauce and vegetables.
