Ingredients

- 2 lbs beef tenderloin
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 1 tablespoon butter
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Heat a skillet over medium-high heat and sear the beef on all sides.
- Transfer the beef to a baking dish and roast in the oven for 25-30 minutes.
- In the same skillet, add red wine and reduce by half.
- Steam mixed vegetables until tender.
- Remove the beef from the oven, let it rest, and slice.
- Serve beef with wine sauce and vegetables.

- Let the beef rest for 10 minutes before slicing.
- Adjust cooking time based on desired doneness.
