- 2 lbs beef tenderloin
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup red wine
- 1 cup beef broth
- 1 tablespoon butter
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt, pepper, garlic, rosemary, and thyme.
- Heat olive oil in a skillet over medium-high heat.
- Sear the beef on all sides until browned.
- Transfer the skillet to the oven and roast for 25-30 minutes for medium-rare.
- Remove the beef from the oven and let it rest for 10 minutes.
- In the same skillet, add red wine and beef broth, scraping up any bits.
- Reduce sauce by half and stir in butter.
- Slice the beef and serve with the sauce.
