Ingredients

  • 1 cup heavy cream
  • 1/4 cup white wine
  • 1/4 cup shallots, chopped
  • 2 tablespoons butter
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a saucepan, melt butter over medium heat.
  2. Add shallots and sauté until translucent.
  3. Stir in tomato paste and cook for 1 minute.
  4. Pour in white wine and let it reduce by half.
  5. Add lobster stock and thyme, then simmer for 10 minutes.
  6. Stir in heavy cream and cook for another 5 minutes.
  7. Season with salt and pepper.
  8. Blend the sauce until smooth, then strain if desired.
