- 1 cup heavy cream
- 1/4 cup white wine
- 1/4 cup shallots, chopped
- 2 tablespoons butter
- 1 tablespoon tomato paste

Instructions
- In a saucepan, melt butter over medium heat.
- Add shallots and sauté until translucent.
- Stir in tomato paste and cook for 1 minute.
- Pour in white wine and let it reduce by half.
- Add lobster stock and thyme, then simmer for 10 minutes.
- Stir in heavy cream and cook for another 5 minutes.
- Season with salt and pepper.
- Blend the sauce until smooth, then strain if desired.
