Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, and cilantro.
- In a small bowl, mix lime juice, cumin, salt, and pepper.
- Pour dressing over the quinoa mixture and toss to combine.
- Top with diced avocado before serving.

- This dish can be made ahead of time.
- Store leftovers in the fridge for up to 3 days.
