Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, drained
- 1 red bell pepper, chopped
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 2 limes, juiced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat to low and cover for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine black beans, corn, bell pepper, avocado, and cilantro.
- Add cooled quinoa to the bowl.
- Mix lime juice, cumin, salt, and pepper in a separate bowl.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
