A delicious selection of gluten-free snacks perfect for your Super Bowl party.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed
  • 1 cup corn, drained
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat to low and cover for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, corn, bell pepper, avocado, and cilantro.
  6. Add cooled quinoa to the bowl.
  7. Mix lime juice, cumin, salt, and pepper in a separate bowl.
  8. Pour dressing over the salad and toss to combine.
  9. Serve chilled or at room temperature.
