Simple meals suitable for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a bowl, mix black beans, corn, bell pepper, olive oil, cumin, paprika, salt, and pepper.
- Once quinoa is cooked, fluff it with a fork and mix it with the vegetable mixture.
- Top with avocado slices and serve.
Notes
- Adjust spices according to taste.
- Can add more vegetables as desired.
- Store leftovers in the refrigerator for up to three days.
