Ingredients

  • 1 can black beans, rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin

  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a bowl, mix black beans, corn, bell pepper, olive oil, cumin, paprika, salt, and pepper.
  5. Once quinoa is cooked, fluff it with a fork and mix it with the vegetable mixture.
  6. Top with avocado slices and serve.
