Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • Optional: 1 ham hock or smoked sausage for flavor

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, combine black-eyed peas, water, onion, garlic, salt, pepper, and bay leaf.
  3. If using, add ham hock or smoked sausage.
  4. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for about 1 to 1.5 hours until peas are tender.
  6. Remove bay leaf and meat if used. Serve hot.

Notes

  • Soaking peas overnight can reduce cooking time.
  • Add more water if needed during cooking.
