Ingredients

  • 1 cup coconut oil, solid
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, cream of tartar, and salt.
  3. In another bowl, cream together coconut oil, brown sugar, and granulated sugar.
  4. Add vanilla extract and almond milk to the mixture.
  5. Gradually add dry ingredients to the wet mixture.
  6. In a small bowl, combine cinnamon and remaining sugar.
  7. Form dough into balls and roll in the cinnamon-sugar mixture.
  8. Place on a baking sheet and flatten slightly.
  9. Bake for 10-12 minutes until edges are golden.
  10. Cool on a wire rack.
