Ingredients

  • 200g sultanas
  • 100g currants
  • 100g chopped mixed nuts
  • 200g dark brown sugar
  • 250g breadcrumbs
  • 100g suet
  • 1 tsp mixed spice
  • 1/2 tsp salt
  • 2 eggs
  • 200ml milk
  • 50ml brandy

Instructions

  1. In a large bowl, combine all the dried fruits and nuts.
  2. Add sugar, breadcrumbs, suet, mixed spice, and salt. Mix well.
  3. In another bowl, whisk eggs, milk, and brandy.
  4. Pour the wet mixture into the dry ingredients. Stir until combined.
  5. Transfer the mixture into a greased pudding basin.
  6. Cover with parchment paper and foil.
  7. Steam for 6 hours, ensuring the water does not boil dry.
  8. Let it cool and store in a cool place until Christmas.

Notes

  • Reheat the pudding by steaming for 2 hours before serving.
  • Serve with brandy sauce or custard.
  • Can be made several weeks in advance.
