Delicious and light Christmas meringue cookies.
Ingredients

- 4 egg whites
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 cup crushed peppermint candies
Instructions
- Preheat oven to 225°F (110°C).
- In a clean bowl, beat egg whites until foamy.
- Add cream of tartar and continue beating until soft peaks form.
- Gradually add sugar, beating until stiff peaks form.
- Mix in vanilla and peppermint extracts.
- Fold in crushed peppermint candies gently.
- Spoon or pipe meringue onto a baking sheet lined with parchment paper.
- Bake for 1.5 hours or until dry to the touch.
- Turn off oven and let cookies cool inside for 1 hour.
