A rich and moist Christmas fruit cake filled with dried fruits and nuts.
Ingredients

- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsweetened applesauce
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix dried fruits and nuts.
- In another bowl, combine applesauce, sugar, oil, eggs, and vanilla.
- Add flour, baking powder, and spices to the wet mixture.
- Fold in the fruit and nut mixture.
- Pour the batter into a greased cake pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store in an airtight container.
- Can be made ahead of time for better flavor.
- Optional: soak fruits in rum overnight for extra flavor.
