A festive roast duck recipe perfect for Christmas dinner.


Ingredients

  • 1 whole duck (about 56 pounds)
  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 cloves of garlic, smashed
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Remove the giblets from the duck and pat it dry with paper towels.
  3. Season the duck inside and out with salt, pepper, thyme, and paprika.
  4. Stuff the cavity with oranges, onion, and garlic.
  5. Place the duck on a roasting rack in a roasting pan.
  6. Pour chicken broth into the bottom of the pan.
  7. Roast the duck for 2 hours, basting every 30 minutes.
  8. During the last 30 minutes, brush duck with honey.
  9. Ensure the internal temperature reaches 165°F (75°C).
  10. Let it rest for 15 minutes before carving.
