Ingredients

  • 3 large eggs

  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract for filling
  • Crushed peppermint for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 15×10-inch jelly roll pan and line it with parchment paper.
  3. In a bowl, mix flour, baking powder, and salt.
  4. In another bowl, beat eggs and sugar until thick.
  5. Add vanilla to the egg mixture.
  6. Gradually fold in the flour mixture.
  7. Spread the batter into the pan and bake for 12-15 minutes.
  8. Once baked, invert the cake onto a powdered sugar-dusted towel.
  9. Roll the cake up with the towel and let it cool.
  10. Whip heavy cream and mix with powdered sugar and vanilla.
  11. Unroll the cooled cake and spread the cream filling.
  12. Roll it back up and chill for at least 1 hour.
  13. Slice and garnish with crushed peppermint before serving.
