A festive cake roll filled with sweet cream and decorated for Christmas.
Ingredients

- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract for filling
- Crushed peppermint for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 15×10-inch jelly roll pan and line it with parchment paper.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until thick.
- Add vanilla to the egg mixture.
- Gradually fold in the flour mixture.
- Spread the batter into the pan and bake for 12-15 minutes.
- Once baked, invert the cake onto a powdered sugar-dusted towel.
- Roll the cake up with the towel and let it cool.
- Whip heavy cream and mix with powdered sugar and vanilla.
- Unroll the cooled cake and spread the cream filling.
- Roll it back up and chill for at least 1 hour.
- Slice and garnish with crushed peppermint before serving.
