Ingredients
- Rice: 2 cups
- Pork: 1 pound
- Vegetables: 3 cups mixed
- Soy sauce: 1/4 cup
- Garlic: 3 cloves
- Ginger: 1 tablespoon
- Sesame oil: 2 tablespoons
- Spring onions: 1/2 cup
- Red dates: 1/2 cup
- Water: 4 cups
Instructions
- Rinse rice under cold water until clear.
- In a pot, combine rice and 4 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- In a pan, heat sesame oil over medium heat.
- Add garlic and ginger; sauté until fragrant.
- Add pork and cook until browned.
- Add mixed vegetables and cook for 5 minutes.
- Stir in soy sauce and spring onions. Cook for another 2 minutes.
- Serve pork and vegetables over rice.
- Add red dates as garnish.
