  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, bell pepper, and celery; sauté until soft.
  4. Add soaked peas, water, Cajun seasoning, bay leaf, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Remove bay leaf and serve hot.
