Description
A simple and hearty black-eyed peas recipe made in a crock pot.
Ingredients

- 1 pound black-eyed peas, dried
- 6 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- 2 carrots, chopped
- 1 celery stalk, chopped
- Optional: 1 ham hock or smoked sausage
Instructions
- Rinse the black-eyed peas under cold water.
- In the crock pot, combine all ingredients.
- Add the vegetable broth and stir well.
- If using, add the ham hock or smoked sausage.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Remove the bay leaf and ham hock/sausage before serving.
Notes
- Soaking the peas overnight is optional but can reduce cooking time.
- Adjust seasoning to taste before serving.
- This dish pairs well with cornbread.
