Description
A hearty black eyed peas chicken soup that warms you up.
Ingredients

- 1 cup black eyed peas
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp thyme
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Soak black eyed peas overnight.
- In a large pot, sauté onion, carrots, celery, and garlic until soft.
- Add diced chicken and cook until browned.
- Add soaked black eyed peas and chicken broth.
- Stir in thyme and cumin.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper.
- Serve hot.
Notes
- For a vegetarian version, omit chicken and use vegetable broth.
- Adjust spices to your taste.
