Description
A hearty soup made with black eyed peas and okra.
Ingredients

- 1 cup black eyed peas
- 2 cups sliced okra
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Rinse the black eyed peas and soak them overnight.
- In a large pot, sauté onion and garlic until soft.
- Add the soaked black eyed peas and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add okra, diced tomatoes, cumin, salt, and pepper.
- Simmer for an additional 20 minutes until okra is tender.
- Serve hot.
