Instructions

  1. Rinse the black eyed peas and soak them overnight.
  2. In a large pot, sauté onion and garlic until soft.
  3. Add the soaked black eyed peas and vegetable broth to the pot.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add okra, diced tomatoes, cumin, salt, and pepper.
  6. Simmer for an additional 20 minutes until okra is tender.
