Delicious cannolis filled with zesty lemon meringue pie filling.
Ingredients

- 12 cannoli shells
- 1 cup lemon curd
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini marshmallows
- Zest of 1 lemon
Instructions
- In a bowl, combine lemon curd and lemon zest.
- In another bowl, whip heavy cream, powdered sugar, vanilla extract, and salt until soft peaks form.
- Fold the lemon curd mixture into the whipped cream.
- Carefully spoon the filling into the cannoli shells.
- Top each cannoli with mini marshmallows.
- Chill for 30 minutes before serving.

- Use store-bought or homemade cannoli shells.
- Adjust sweetness with more or less powdered sugar.
