Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (12 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add beans, corn, green chilies, onion, garlic, cumin, chili powder, and chicken broth.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or high for 4 hours.
  5. Shred the chicken in the crockpot.
  6. Stir in sour cream and cheese before serving.
