Description

A hearty and flavorful white chicken chili.


Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add cooked chicken, beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in sour cream and cheese until melted.
  5. Serve hot and enjoy.
