Description
A hearty soup made with white beans and ham hocks.
Ingredients

- 1 lb white beans
- 2 ham hocks
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Soak the white beans overnight.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Add soaked beans, ham hocks, chicken broth, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove ham hocks, shred meat, and return to the pot.
- Season with salt and pepper.
- Serve hot.
Notes
- Use canned beans for a quicker option.
- Adjust seasoning to your taste.
- Can be stored in the fridge for up to 3 days.
