Ingredients

- 4 bell peppers, chopped
- 1 pound ground turkey
- 1 cup quinoa, cooked
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, sauté onion and garlic until translucent.
- Add ground turkey and cook until browned.
- Mix in chopped bell peppers, quinoa, diced tomatoes, cumin, paprika, salt, and pepper.
- Transfer the mixture to a baking dish.
- Bake for 25-30 minutes.
- Garnish with fresh parsley before serving.
Notes
- Feel free to use any color of bell peppers.
- Substitute ground turkey with beef or tofu for a different flavor.
- This dish can be made ahead and stored in the fridge.
