Ingredients

- 2 lbs ripe tomatoes
- 1/4 cup olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/4 cup fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the tomatoes in half and place them on a baking sheet.
- Drizzle olive oil over the tomatoes.
- Add chopped onion and minced garlic.
- Sprinkle salt, black pepper, and oregano over the top.
- Roast in the oven for 30-40 minutes until the tomatoes are soft.
- Remove from the oven and let cool slightly.
- Transfer to a blender and blend until smooth.
- Stir in fresh basil before serving.
Notes
- Use fresh, ripe tomatoes for the best flavor.
- This sauce can be stored in the fridge for up to one week.
- Freeze leftovers in airtight containers for later use.
