Description
A classic Thanksgiving turkey recipe.
Ingredients

- 1 whole turkey (12–14 pounds)
- 4 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- Remove the turkey giblets and pat the turkey dry.
- Rub the turkey with olive oil, salt, pepper, thyme, and rosemary.
- Stuff the cavity with onion, carrots, and celery.
- Place the turkey in a roasting pan and pour chicken broth around it.
- Cover the turkey with aluminum foil.
- Roast for about 3 hours, removing the foil in the last hour.
- Check the internal temperature; it should reach 165°F (75°C).
- Let the turkey rest for 20 minutes before carving.
Notes
- You can brine the turkey a day before for more flavor.
- Use a meat thermometer for best results.
- Leftover turkey can be used in sandwiches or soups.
