Ingredients
Scale
- 2 cups of quinoa
- 1 cup of cranberries
- 1 cup of diced sweet potatoes
- 1 cup of chopped kale
- 1/2 cup of walnuts
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of cinnamon
- 3 cups of vegetable broth
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Add sweet potatoes, cover, and simmer for 15 minutes.
- Stir in cranberries, kale, walnuts, olive oil, salt, pepper, and cinnamon.
- Cook for another 5 minutes until kale is wilted.
- Fluff with a fork and serve hot.
Notes
- Substitute walnuts with pecans for a different flavor.
- Use vegetable broth for a vegetarian option.
