Ingredients

  • 1 cup of diced sweet potatoes
  • 1 cup of chopped kale
  • 1/2 cup of walnuts
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of cinnamon
  • 3 cups of vegetable broth

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Add sweet potatoes, cover, and simmer for 15 minutes.
  4. Stir in cranberries, kale, walnuts, olive oil, salt, pepper, and cinnamon.
  5. Cook for another 5 minutes until kale is wilted.
  6. Fluff with a fork and serve hot.

Notes

  • Substitute walnuts with pecans for a different flavor.
  • Use vegetable broth for a vegetarian option.
